Allergens in Maltese rabbit stew: ingredients, variations and how to order safely

By the Menulta editorial team · Facts checked 15 October 2026 · Updated 15 October 2026

The short answer

Stuffat tal-fenek, Malta's national dish of rabbit stewed in red wine, garlic and tomato, usually contains sulphites (red wine) and often celery (vegetable base or stock). It may contain gluten if the rabbit is dusted with flour before browning, and it is often served with bread or spaghetti. Rabbit itself is not an EU allergen. Fenek moqli (fried rabbit) and fenkata meals add other dishes with their own allergens.

What Maltese rabbit stew is

Rabbit is Malta's most famous meat dish, traditionally eaten at a fenkata, a communal rabbit feast. Stuffat tal-fenek is a slow stew of rabbit pieces marinated and cooked in red wine with garlic, bay leaves, tomatoes, onions, peas and potatoes. Spaghetti with the rabbit sauce is often served first, followed by the meat.

Variations that change the allergens

Fenek moqli is rabbit fried in olive oil with garlic and wine, which keeps sulphites and may skip celery. Fenek biz-zalza is rabbit in tomato sauce. At a fenkata, the spaghetti course adds gluten (and egg if fresh pasta is used), and the rabbit is often accompanied by chips (shared fryer) and bread.

Restaurant and bought-in versions

Restaurants usually prepare rabbit stew in advance. Ask whether flour is used, whether a stock cube is added, and how the spaghetti and sides are prepared. The stew itself can be one of the more allergen-friendly traditional Maltese dishes, apart from sulphites.
