Allergens in timpana: ingredients, variations and how to order safely

By the Menulta editorial team · Facts checked 15 October 2026 · Updated 15 October 2026

The short answer

Timpana, Malta's baked pasta pie, typically contains gluten (macaroni and the pastry case), egg (beaten eggs binding the pasta and often an egg wash), milk (grated cheese and sometimes butter in the pastry), celery (the meat sauce base) and sulphites if wine is used in the sauce. Some family recipes add chicken livers or hard-boiled eggs.

What timpana is

Timpana is a festive Maltese dish of macaroni mixed with a rich meat and tomato sauce, beaten eggs and grated cheese, baked inside a pastry case. It is related to Sicilian timballo and is served at family gatherings and in traditional restaurants, often cut into wedges.

Each family has its own recipe, so ingredients vary more than for many restaurant dishes.

Variations that change the allergens

Some recipes include chicken livers, hard-boiled eggs or peas. Imqarrun il-forn is the same pasta bake without the pastry case, so it removes the pastry but keeps gluten, egg, milk and celery. Vegetarian versions omit meat but keep the other allergens.

Restaurant and bought-in versions

Restaurants and bakeries make timpana in large dishes and cut portions, so it cannot be adapted for an individual allergy. Some bakeries sell timpana by the slice. Ask for the full ingredients, especially the pastry fat, cheese and any stock cubes.
